One of the best food pairings I have ever had was caramelized Goat cheese with Victory's Saison.
The spritziness of the Saison cut perfectly into the rich goat cheese. I had it at a Victory beer dinner at CoRK in Westmont, NJ.
I tried to recreate it yesterday.
I didn't have luck with the Goat Cheese keeping its shape when I pan seared it. So it ended up being more of a spread. I then drizzled some honey and sprinkled a bit o' tarragon on top.
The goat cheese also had a black pepper rind.
Poured myself some saison.
And my Saturday had gotten just a bit better.
