PorktoberFest Day 4: The Garden State Edition

I'm calling this the Garden State Edition for two reasons.

Reason 1)

Ron Johnson the famed suave bartender of Standard Tap lives in Collingswood and he gave me a recipe for Pork Tenderloin.
Here it is in his very OWN hand writing...
He promises it will not be dry.

Reason 2)

Sly Fox and Dogfish hosted a wonderful dinner at the Pourhouse in Westmont off of Haddon Ave.
One of the main courses was an Oktoberfest plate include sausage and pork shoulder...

More on that later.
Gotta get some b fast.
